1 Dozen, 90 minute, soft pretzels.
3 1/2 C flour 1 C warm water
2 tbsp sugar 1tbsp butter -melted
1tsp salt 3 or 4 more tbsp butter -melted
1 pkg or 2 1/4tsp. dry yeast
Dissolve yeast in warm water, sugar and 1tbsp melted butter.
After yeast has proofed, add 1 C flour and salt beat, with spoon, 2 minutes.
Stir in enough flour to make a soft (but not too soft dough).
Knead 5 minutes, set in oiled bowl, cover and let rise 40 minutes.
Punch down dough, divide into 12 pieces (sometimes it comes out a little less)
Let rest a couple minutes.
Roll each piece into a 20 inch rope.
Shape into pretzels. I can't describe the process, you can figure it out, or maybe good old youtube.
Place on baking sheet - i usually use parchment for this recipe.
Let rise 5 minutes,- depends on how wartm your room is.
Brush with butter, sprinkle on course salt, cinnamon/sugar etc.
Bake at 375 15 minutes, or until done.
